Yep. The fish and chip chip is a different kettle of chips altogether. But takeaway is rarely the benchmark that fine dining chefs seek to emulate.

Takeaway chips if delivered are rank more often than not. Straight out of the fryer at a decent fishie, fucking glorious! Especially with batter!

Yeah, a lot of that has been eliminated with boxes but sitting in steam for 5-10 mins does them no good. Which is why we do the first cook in the thrice-cooked method. It removes a lot of the water that creates the steam that spoils them.

My mate who makes some amazing chips, soaks his in warm milk before thoroughly rinsing them.

Might be an improvement.

Mid you do say he makes "some" amazing chips.

I said people that get excited about food, not people that enjoy food! I enjoy food too. I look forward to it too. I recognise that it's builds connections with others, etc.

I just don't like people making too much out of it. I mean... fucking hell, people are starving around the world and you're going to shit that thing out in few hours time! Have some humility.

If you’ve been in the what are you eating thread you’ll know I not only love my food but make a big deal out of it, during Covid it’s helped my mental health massively and with the cost of living rising it’s also saved us money and brought us together closer as a family. Especially my boys who now enjoy making their own pizzas, toasties, pasta and all kinds of food, all unhealthy of course ha ha.

BTW, how long have we got before famine becomes the next major threat to the world? :(

It’s always been a major threat, hunger is a bigger killer than any Covid…

I mean the threat affecting more people than in the past.

Did it also contribute to your health issues?

Oh aye, it’s only going to get worse IMO. We supposedly live in a first-rate country and many people can’t even afford food.

The fetishisation of food is a problem like, especially with Instagram in the mix. That and the decadence of it all I find problematic. I totally agree in that respect. Like, there’s so much “artisan” food out there and I find myself asking, do we really need all of this? Especially when there are huge inequalities in access to food. Though it doesn’t seem to stop people cutting around taking photos of their expensively assembled meal or treat and sharing it all over social media.

Aye, people wanting to show off at Salt Bae’s dumpster of a restaurant and the like ruin it. Food in itself is one of life’s great joys though, love cooking and although I’m a bit picky about the odd ingredient I love all world cuisine. Could honestly eat gelato three times a day every day

That's more an issue with social media rather than food and you can easily get around it by fucking social media off, or just not following people who post images of their food all the time [emoji38]

Not really sure what starving kids in Africa has to do with people eating pornographic food in the UK like. There's literally no meaningful relation between the two. Us living on microwave dinners wouldn't make Africa any more of a prosperous country. It's like arguing that I should be playing a PS2 on a 20" CRT TV because most Africans cannot afford a 4K tele or a modern console. It's an absurd argument.

Africans don't have all the processed junk and junk advertising that is beamed into their minds hundreds of times a day like.

When I was last in Kenya at my wife’s aunt’s house, all the women made lunch, goat meat, beef, chicken, rice, salads, sweet stuff, fruit, all fresh, bread, naans, chapatis, with amazing sauces and dips, local produce, fucking most amazing sitting down to lunch I’ve ever had. And we used our hands, no forks or knives, was liberating. Even the poorer people were drinking from fresh coconut, eating fresh fruit and using their own goats and chickens to make fresh meat stews and curries! The smells was amazing!

Cheers ha ha. It’s through traveling really I’ve opened up my mind to different food, we are so hung up here in the U.K. on takeaway shit, fast food and literal junk.
